Secret Behind Famous Lomi Soup

The most famous Chinese-Filipino chicken noodle soup, Lomi Special, is my favorite. It’s such a comfort food that you’ll want it every time you feel low. Whenever I had cravings to taste it, my go-to choice was always Ambers Restaurant.

I’ve tried Lomi from numerous places, but trust me, the taste of Amber’s Restaurant Lomi Special is out of this world. This incredible taste led me on a journey to research why it’s so comforting and yummy. Luckily, I also got my answers, which I will share below. 

What I found is that to make the Lomi special, you need to take care of every ingredient. The secret lies in the right balance of flavors and the freshness of the ingredients. Let’s discover more about this dish!

Let’s Make The Famous Lomi at Home

Here’s how I made Lomi soup at home and always get amazing results. You can follow the same steps and make restaurant-style Lomi soup easily. 

Lomi Special Recipe Ingredients amber menu

Key-Ingredients:

  • Round egg noodles (Pansit Miki) 200 grams
  • Chicken 200 grams 
  • Shrimp 100 grams 
  • Squid balls 
  • Chicken liver 50 grams
  • Carrot 1 small 
  • Cabbage 1/4 
  • Red bell pepper 
  • Celery chopped
  • Spring onion chopped
  • One onion chopped
  • Garlic 3 cloves 
  • 5-6 cups chicken broth 
  • Oyster sauce 1 tbsp 
  • Soy sauce 2 tbsp 
  • Knorr seasoning 2 tbsp 
  • Vinegar 1 tbsp 
  • 3 eggs 
  • Chicharon (pork rinds)

Cooking Instructions:

Prepare Meat & Vegetables:

  • You need to start by cutting vegetables. First, mince garlic and onion then cut carrots, and red bell pepper into slices as well as celery, spring onion, and cabbage. 
  • After cutting all vegetables it’s time to cut meat, place chicken pieces on the cutting board and cut them into small pieces, remove the vein from shrimps, and cut the liver. 
  • Take a bowl, add chicharron to it, and crush it with the help of a pestle and everything is ready to cook.

Cook Ingredients:

  • Pour water into a cooking pot, add noodles, and cook it. Once, they’re cooked, set aside for later use. 
  • Take a pan, add oil then onion and garlic, and cook them until they become golden brown. Once they’re golden brown, add chicken stir them well, and then add salt. 
  • When you see the chicken has changed color from pink to white, add squid balls, liver, and shrimp. Stir them well again for a few minutes before adding black pepper. 
  • Pour the chicken broth into the pan, add oyster sauce, Knorr seasoning, soy sauce, and vinegar, and cover the pan with a lid for a few minutes. 
  • After a few minutes, open the lid and add the noodles, carrots, and cabbage. Stir and let them cook for another 2 minutes.
  • Make a liquid mixture of 2 tablespoons of cornstarch in 1/2 cup of water and add this to the pan. Not to forget, you’ve to regularly stir after adding the cornstarch, or else there will be lumps. 
  • Lastly, add bell pepper, and celery and pour the beaten eggs into the soup while stirring gently to create egg ribbons. Stir and let it simmer for one more minute.
