Extra Crispy Texture:
Amber restaurant’s fish isn’t the typical fish dish that’s fried in the oil. In their fish fillet they make it crispy by applying a coat of eggs, flour, and most importantly bread crumbs before frying. This extra step creates a crispy skin that will make you fall in love with the dish all over again.
Spices:
Besides the crispiness, you’ll feel the flavor in every bite of fish meat. It’s all because of the spices salt and pepper we use when marinating the meat. The marination enhances the meat’s flavor.
Tartar Sauce:
No fish fillet is complete without the tartar sauce which is made from scratch, combining mayonnaise, finely chopped onion, caper, garlic, parsley, calamansi juice, and salt and pepper.
Customization:
It’s up to you which drink you want with fish fillet, but if it’s up to me, I would suggest tetra juice or orange juice. I like both of them, they go well with the fish, especially the orange juice.

Key-Ingredients:
Fish Fillets:
- 500 grams fish
- One cup flour
- 2 eggs
- 1 pack of breadcrumbs
- Oil for frying
- Salt
- Pepper
Tetra Sauce:
- 400 grams mayonnaise
- 40 grams caper in vinegar
- 1 small chopped onion
- 3 cloves minced garlic
- 2 tablespoons minced parsley
- 1 tablespoon calamansi juice
- 1 tablespoon sugar
- Salt and pepper to taste
Cooking Instructions:
For the Fish Fillet
- Clean and cut the fish into pieces, season them with salt and pepper for marination, and leave them for an hour.
- Prepare three bowls: one with flour, one with beaten eggs, and one with breadcrumbs. Make sure to coat fish pieces in flour, then egg, then breadcrumbs.
- Heat oil in a pan for frying and fry the coated fish pieces until they turn golden brown. Lastly, remove and drain excess oil on paper towels.
For the Tartar Sauce
- Get a bowl and add mayonnaise, capers, chopped onion, minced garlic, minced parsley, calamansi juice, sugar, salt and pepper to taste. After that, stir the sauce well to combine all the ingredients.
