About Pasta Carbonara?
Besides its countless qualities, this creamy pasta has a vague history. There is a large group of people with the theory that it was traditionally made with milk, however, the original recipe had the usage of eggs for the sauce and not milk. Maybe they assume this because of its white sauce but now the evolved version of the dish also uses milk, cream, and cheese. The original recipe of pasta carbonara uses some simple ingredients that are easily available like eggs, ground black pepper, pasta, and guanciale and if you can’t find guanciale, bacon is also a good option to go with the creamy sauce.
Pasta Carbonara is quite an old recipe and its roots meet somewhere in 1837 when Ippolito Cavalcanti wrote a Neapolitan cookbook named “Cucina Teorico Pratica” where he named the dish “alla carbonara” which means “coal-worker’s style” because many theories say that the dish was created by coal miners. While there are also some stories about an American soldier who created the dish in the 1940s some think the origin of the dish is from Rome, Italy. Anyhow, whoever is the creator of the dish, it made its way to one of the favorite dishes in most parts of the world and by following the recipe below you can make it in your home kitchen as well.
Recipe of Creamy Carbonara
Follow the package instructions to cook spaghetti or you can use other varieties of pasta if you prefer such as Fettuccine or Capellini. All-purpose cream is the best option to use for making the sauce but you may use table cream or heavy whipping cream if all-purpose cream is not available. The amount of bacon to use relay on your taste, I personally like it balanced but you can increase or decrease the amount as per your choice. Let’s dig deep into the recipe.
Ingredients
- 1 pound spaghetti
- 6 ounces chopped bacon
- 1 can (4 ounces) sliced button mushrooms
- ½ cup grated Parmesan cheese
- 1 (21-ounce) container heavy cream (or all-purpose cream)
- 5 cloves garlic, minced
- 2 tablespoons chopped fresh parsley
- Salt, to taste (optional, since the Knorr beef cube already adds saltiness)
- Water (enough to cook the pasta according to package instructions) (approximately 3 quarts)
Instructions
- Bring the water to boil in a big cooking pot.
- When the water is boiled, add salt and spaghetti to the pot to cook according to the package instructions. When cooked, extract the spaghetti from the water and set aside.
- Heat another cooking pot, preferably a pan, and add bacon to it. Cook the bacon until it achieves a crispy texture. The bacon should also melt the fat in the process which we will later use in preparing of sauce.
- When the bacon is crispy, remove them from the pot and set aside in a clean plate or bowl. Discard the fat released by the bacon but leave 3-4 tablespoons in the pot to be used in making sauce.
- Add garlic in the remaining fat and saute until they turn brown. Add mushrooms and cook for another 40 seconds.
- Add crushed Knorr Beef Cube to the mixture while stirring continuously.
- Add all-purpose cream to the pot and keep stirring for another 4-5 minutes.
- Add Parmesan cheese and half of the bacon that we cooked into the pot, stirring until the sauce becomes smooth.
- Now spread the cooked pasta in a large pot add the prepared Carbonara sauce over the pasta and sprinkle some (not all) bacon and chopped parsley. Mix well until everything is incorporated.
- When all the ingredients are evenly blended, move the mixture to a plate and add toppings of Parmesan cheese, bacon, and chopped parsley.
