Ingredients

  • 2 skinned and chopped buds of garlic
  • Half thinly sliced or diced onion
  • Thinly cut celery (ribs from 3 to 4 in number), you may use snow peas or green beans instead
  • Skinned and thinly sliced carrots (3 to 4)
  • A quarter or one-third thinly sliced wedge of cabbage
  • Chicken stock maximum 3 cups
  • One tablespoon of Fish sauce which you can replace with soy sauce or tamari
  • 2 or 3 tab spoons of soy sauce (coconut aminos or tamari if gluten-free)
  • Rice noodles containing 8 ounces(The most preferred Brand)
  • Your picked protein(preferred one)
  • Use vegetable oil or 2 to 5 tablespoons of olive oil
  • Decorate with lemon or wedges of lime, ground pepper and scallions

Protein Options (Choose one or more, if using)

  • Breast chicken without bones and skin(one at least). It can be replaced with a remaining roasted chicken
  • Half a pound of ground pork
  • 1/2 pound raw shrimp, peeled and deveined (or cooked shrimp)
  • 2 pieces of sliced Chinese sausage

Instructions

1: Prepare the Protein (As per preferences):

  1. Put two tablespoons of oil in a large pot and set over medium flame. 
  2. Put the meat you have opted for in the pot, it can be ground pork or shrimp. 
  3. Keep cooking for a few minutes having it seasoned with salt and pepper during cooking. In the case of shrimp, reduce the cooking duration. Place the meat aside. 
  4. You may use chicken breast in the stock as a replacement and tear up meat before mixing it with noodles. 
  5. You can also use the stock later for softening of noodles.

(Note: You can avoid this step if you are with residual cooked meat.)

2: Sauté the Vegetables:

  1. Use the same pot for adding 1 or 2 tablespoon of oil. 
  2. Then add onion, celery, and carrots, and keep stirring them for a maximum of 5 minutes on a medium-high flame. 
  3. In the last couple of minutes add your chopped garlic. 
  4. Mix fish sauce and soy sauce (substitute ingredients), when cooking vegetables. 
  5. Then shift them to the same bowl and place them separately

3: Prepare the Noodles

  1. Now add chicken stock in the same pot and start boiling.
  2. Set the flame low for simmering and add dried rice noodles. 
  3. For softening the noodle strands, keep coaxing them in the stock. 
  4. Note that the stock should be as much as to cover the noodles. If you don’t have much stock, you may add some water. 
  5. Continue the process for 6 to 8 minutes so that all the liquid is absorbed by the noodles.

4: Stir-fry the Pancit:

  1. After the noodles become soft, bring vegetables and protein and add to the mixture. 
  2. Set the flame to medium-high and start tossing them with noodles. Using two turners will bring more ease in this process. 
  3. Put a single teaspoon or a couple, of oil, if required. 
  4. You may add some more soy sauce to the noodles if necessary. 
  5. Keep tossing for a few minutes so that the noodles get steamy while the meat and vegetables are in harmony. 
  6. Your dish is ready; now you may put it on a serving plate and garnish it with lemon, lime wedges, and ground pepper.
