Sotanghon Guisado A Savory Filipino Noodle Dish

Pancit is a vital part of Filipino cuisine, thanks to the Chinese immigrants who introduced it way back when they came to the Philippines and settled during the Ming dynasty in the 13th century. Now the menu looks incomplete when there’s some sort of celebration or an event, without noodles. Amber realizes this very well and that’s why they serve quite a few Pancit dishes on their menu, including Amber’s special Pancit Malabon, Spaghetti With Meat Sauce, Pancit Otso, and more. Today we will discuss Sotanghon Guisado also known as Pancit Sotanghon Guisado.

Like most Pancit dishes, this one is also easy to cook and is made with the ingredients that are commonly available in a Filipino kitchen. The noodles we use to cook this specific Pancit dish are vermicelli noodles, made from Rice flour or mung bean starch. These are thin, white, translucent noodles with a delicate texture that are gluten-free and absorb flavor easily from other ingredients and cook quickly. How to cook sotanghon guisado

Start by soaking 300 grams of vermicelli noodles in a bowl for 10 to 15 minutes. Heat some oil in a pan and cook some garlic in it, until they become brown. When the garlic changes its color to brown, add annatto seeds to the pan to make annatto oil. You will know it’s done when the oil changes to orange in color, this will need stirring for only a few seconds. When done, remove the seeds from the oil and throw them away. 

Now in the pan with annatto oil, add pork slices and cook until brown. Reduce the oil from the pan until three tablespoons are left and add onions to sauté. Then add carrots and after cooking for 1 minute add half a cup of water and soya sauce to the mixture and bring to a boil. After the boil, add Knorr Shrimp cube, cabbage, snow peas, and bell pepper and cook for another 2 minutes while stirring. Now add the vermicelli noodles and green onions to the mixture and toss the ingredients to mix well. Add fish sauce, black pepper, and toasted garlic as seasoning. Your Guisado is ready to serve.

Sotanghon Guisado Recipe

Ingredients

  • 6 ounces sliced pork shoulder
  • 1 Knorr Shrimp cube (or similar brand chicken/vegetable bouillon cube)
  • 300 grams Vermicelli noodles
  • ½ head of cabbage, thinly sliced
  • 1 carrot, julienned (thinly sliced into matchsticks)
  • 1 red bell pepper, julienned
  • 1 bunch green onions, chopped
  • 3 ounces snow peas, trimmed
  • 1 onion, chopped
  • 8 cloves garlic, minced
  • 2 teaspoons annatto seeds (or 1 teaspoon achiote powder)
  • ¼ cup soy sauce
  • 1 cup water
  • ¼ cup cooking oil
  • Fish sauce and ground black pepper to taste (adjust to your preference)

Instructions

  1. Soak Sotanghon noodles in water for 10-15 minutes.
  2. Crush garlic and add in a pan with heated oil. Remove and set aside when the garlic is cooked or turned brown.
  3. Add annatto seeds to the pan with the oil in which the garlic was cooked. Cook for 10 seconds and you will notice that the color of the oil has turned orange, that is when you know the annatto oil is ready. Remove the seeds from the oil and discard.
  4. Cook the pork in the prepared annatto oil until its color changes to brown.
  5. Remove the excess oil until only 3 tablespoons are left. Add onions and sauté until they are soft.
  6. Add carrot and cook for another 1 minute before adding soy sauce and half a cup of water and cook until boiled. 
  7. Now add Knorr Shrimp Cube, cabbage, snow peas, and bell pepper, and cook the mixture for another 2 minutes.
  8. Add Sotanghon to the pan and carefully mix all the ingredients by tossing.
  9. Add the remaining half cup of water and cook on low heat for another 3 minutes while covering the pan.
  10. Lastly, add green onions.
  11. Add seasoning of fish sauce and ground black pepper and sprinkle the toasted garlic that we put aside earlier.
  12. The dish is ready to transfer to a serving plate. Enjoy!
