Amber’s Creamy Seafood Pasta

Among new arrivals on Amber’s menu, seafood pasta is my favorite and no seafood lover can resist this creamy delight with seafood all over it. This creamy pasta is a delicious and comforting dish that you can have for lunch or dinner and you can find it in almost any good restaurants all over the Philippines. The one Amber serves on their menu is a bit creamy and has a light savory taste, of course with the domination of sea flavor. 

The good news is that we can easily cook pasta in our homes following this quick and easy-to-cook recipe I shared in this article. It combines two culinary staples, a pleasant pasta comfort, and sea flavors in the form of different kinds of seafood like shrimp, bay scallops, mussels, clams, and whatever you like to add. For the most vibrant flavor try to find fresh seafood to add to the pasta, if fresh is not possible and you are using frozen seafood then make sure to thaw it and remove the water properly.

How to cook seafood pasta?

Well, preparing this creamy pasta with seafood is fun and easy to make and can hardly take 20 to 30 minutes to cook. The dish mainly has pasta tossed with creamy garlic sauce and seafood like shrimp, scallops, mussels, clams, and even fish (though I won’t suggest adding fish because that may break during the tossing, if you like to add the fish, you can do that at a later stage of the cooking process). The dish is delicious, has a quick recipe, and is easy to make that’s why it is the favorite dish of many seafood lovers, including myself.

To prepare this delicious pasta recipe, you need to start by cooking the pasta as per instructions of the pack. When pasta is ready, the next step would be cooking the seafood in onion and then preparing the creamy white sauce using butter, all-purpose flour, and milk. The seafood used in this dish normally takes not more than a few minutes to cook. When the sauce is ready and the seafood is cooked, now it’s time to pour these over the prepared pasta. Here, your delicious, Amber special seafood pasta is ready. 

Ingredients

  • 1 pound linguine (cooked according to package instructions)
  • 1 pound large shrimp (peeled and deveined)
  • 15 mussels (cleaned)
  • 12 clams (cleaned)
  • ½ pound bay scallops
  • ½ cup chopped fresh parsley
  • 1 small yellow onion (minced)
  • 1 teaspoon minced garlic
  • 2 tablespoons butter
  • 2 tablespoons olive oil
  • ½ cup dry white wine
  • 2 tablespoons all-purpose flour
  • 1 cup fresh milk
  • ⅓ cup grated Parmesan cheese

Instructions

  1. Cook the linguine according to the instructions of the pack and arrange it on a serving plate.
  2. To make the white sauce: Add butter to a pan and give heat to melt it. Add flour and cook for 1 minute on medium-low heat, while stirring continuously.
  3.  Add milk to the pan while keep stirring the mixture, until a soft saucy texture is formed. 
  4. When ready, set aside the sauce.
  5. Now, to cook seafood: Add olive oil to a pan and heat it.
  6. Add onion and garlic to sauté.
  7. Cook shrimp and bay scallops to the onion and garlic mixture in a pan and cook for 2 minutes.
  8. Similarly, add mussels and clams to the mixture and cook for another 3 minutes.
  9. Now add a bit of white wine and let it heat until boiled.
  10. When the mixture is boiled, pour the white sauce and stir continuously.
  11. Add parmesan cheese and cook for another 1 minute.
  12. For the topping: Add the mixture of seafood and white sauce as topping to the linguine and sprinkle some chopped parsley for garnish.
  13. And voilà! Your creamy pasta is ready to be devoured. Enjoy!
