I tried it a few years back when my parents took me there for a holiday dinner. From the first bite, I was hooked. Everything from beef to sauce or stuffing was complementing each other (truly made my day).

I always used to wonder why Amber’s beef morcon was so incredibly flavorful. Then I found the secret, and it’s not some ingredient but the cooking method. 

If we don’t cook like a chef, marinate the beef for the right amount of time or make a sauce like them, the result will never be the same. Let me break it down for you in the simplest way!

Marination:

Marination, it’s the most important part of the recipe. Simply because it makes meat juicy and tender. I start by tenderizing the meat with a meat mallet till it becomes soft and big in size. Then let it soak in a marinade of lemon juice, soy sauce, and pepper for about 30 minutes. 

Making Wraps:

In the second part, I stuff the marinated beef pieces with carrots, sausage, cheese, and egg slices, to make it more flavorful. These wraps are then dipped in flour and deep-fried, giving them a crunchy texture.

Sauce:

Once the morcons are perfectly cooked and crispy, they’re served with a flavorful tomato sauce. This sauce also includes liver, which makes its consistency thick.

Although this dish can be a standout easily, I would suggest you order a can of soda with it, or you can also go with the sweat and tangy orange juice. 

Let’s Try Beef Morcon in Tomato Sauce at Home

Now it’s my time to spill the beans about the authentic recipe of beef morcon in tomato sauce. But before you go further, my suggestion would be to follow the exact steps to get the same taste.

Key-Ingredients:

Marination:

  • 2 Pounds beef
  • 2-3 Tablespoons lemon juice
  • ½ Cup soy sauce
  • Pepper to taste

Filling:

  • 10-12 Slices bacon
  • 4 Hard-boiled eggs
  • 2 Sliced hot dogs
  • 4 Gherkin slices
  • 4 Ounces cheddar cheese

Deep-Frying:

  • ½ Cup flour
  • ½ Cup cooking oil

Sauce:

  • 1 Medium onion (chopped)
  • 1 Cup tomato sauce
  • 2 Garlic cloves (minced)
  • ½ Cup liver spread
  • 1-2 Bay leaves
  • 2 Cups water or beef broth
  • Salt to taste
  • Pepper to taste

Cooking Instructions:

  1. You should start by taking the meat pieces and placing them on a stable surface. Then use a meat mallet to gently pound beef pieces until they’re slightly flattened. Don’t forget to trim any excess meat and shape them into rectangles.
  2. Grab a bowl and add lemon juice, soy sauce, and pepper. Dip all the beef meat pieces in it and leave them for 30 minutes. 
  3. Till the meat is marinating, prepare the fillings. Cut carrots, cheese, bacon, hot dogs, and gherkins into long strips and slice the eggs in half. Afterwards, fry the bacon slices until crispy.
  4. Take the meat pieces out of the marinade (save the leftover marinade) and place them on your kitchen counter. Add 3 to 4 strips of bacon to each piece of meat. Top it with 4 to 5 carrot strips, 2 pieces of hot dog, 4 pieces of gherkins, cheddar cheese strips, and half an egg.
  5. Wrap the beef meat around the fillings like a roll and tie it with twine (don’t tie it too tightly). Follow the same process for other meat pieces. Cover the rolls with flour and deep-fry them till they become light brown. 
  6. Remove the oil from the pot, leaving only a few spoonfuls behind to sauté onion and garlic. After sauté, pour in the leftover marinade and let it come to a boil. 
  7. After the first boil, add tomato sauce, 2 cups of water or beef broth, bay leaves, salt, and pepper (as per your taste). 
  8. Give it another boil, and gently add the beef rolls. Later on, lower the heat and let it simmer for about an hour.
  9. Take out the beef rolls from the sauce after an hour, add the liver spread to the tomato sauce in the same pot, and cook for an extra 5 minutes. 
  10. Remove the twine from the beef rolls and slice them into 1-inch-thick rounds. Now you can serve the beef morcon rounds on a platter with the flavorful tomato sauce.
